Marinara Braised Chickpeas - Adopted from the Savory Vegan - Written by Rene
INGREDIENTS
- 4 tablespoons olive oil
- 1/2 large yellow onion diced
- 4 cloves garlic diced
- 1/2 teaspoon smoked paprika
- salt & pepper to taste
- red pepper flakes optional
- 1 15-ounce can chickpeas drained and rinsed
- 1 25-ounce jar marinara sauce
- 2 large handfuls chopped kale, spinach, or collard greens
- fresh parsley, crusty bread for serving
INSTRUCTIONS
Step 1: Heat the oil in a skillet over medium heat. Add the onion, garlic and dry seasonings. Cook down for 2 minutes. Add the chickpeas & Hoboken Farms marinara sauce. Stir to combine and bring to a boil. Lower heat and simmer for 10 minutes.
Step 2: Add the greens and stir until wilted. Taste and adjust seasonings as needed.
Step 3: Serve hot with fresh parsley and crusty bread.
